Every winter, Byron Bay’s Stone & Wood Brewing Company releases its Stone Beer. Inspired by the Middle Ages, the Stone Beer brewing process involves adding wood fired stones to the kettle to rouse the boil.
This year’s brew uses darker roasted malts and more hops to create a darker Ale with a higher alcohol content. The brewer also took measures to improve its ability to age for customers who like to keep the limited edition beer throughout the year – a fact also reflected in the strictly limited run of 300 ceramic bottles, perfect for cellaring, of this year’s brew.
Stone & Wood describes the beer’s palate as having a dark chocolate and aniseed flavour with a firm, bitter and dry finish.
